The bottom line is this, get a turkey pan and turkey over bag, turkey pan you can use the stainless steel one that you bought or just buy the one time use flimsy turkey pan you always see in the grocery store. Buy a turkey that has the pop out thermometer already built in, most have this but this is critical that you get one that has this already in it, that will make it easy. Put it in the turkey bag and cook 3 to 3 and 1/2 hours for a 20 lb turkey. If its 15 pounds then go 2 to 2 1/2 hours, etc. The thermometer makes it easy, just let it go at 350 degrees for 3 hours, and start checking for the thermometer to pop out, you can see it through the over bag. Put the turkey in the over so the pop up thermometer is on top and closest to the over glass so you can easily monitor it, then you know for sure its done all the way through. Happy eating :) The oven bags make it cook faster to, otherwise you might be stuck waiting anohter hour and getting a dryer turkey without it :)

Also thats assuming the turkey is not stuffed, if its a stuffed turkey then you probably want to cook it a 1/2 hour longer.

By the way I just cooked mine and it took 4.5 hours, for a roughly 20 pound bird. Even though it says 3.5 hours with a bag, at 350 temp, so I think it varies alot depending upon the inside being copmletely thawed or not. My thermostat just popped, I was wondering if its possible the thermostat broke!! lol!!! Although I guess that is the reason to have that, it always knows when its done just right.

My turkey was already thawed when I bought it too, but I think when I took the turkey neck and gizzards out of it the inside felt somewhat solid yet, so thats probably why it cooked another hour.
