Your outrec fields statements are just identifying what you want to show on the output. So in this example you are writing out 1814 bytes, starting in byte position 31. It doesn't matter what comes after it, all 1814 will be written. Sort fields is telling you that byte 27 for 30 bytes is character field type sorted in ascending order, and sort field copy just means copy everything.
